
Did a yummy salmon the other day and it turned out really well. Simply diced an onion, sprinkled most of it at the bottom of a pirex dish, along with some garlic, then sliced some lemon and rested a few slices on top of the onion. Placed a couple of salmon fillets on top of this, added salt and pepper, some dill, a little more garlic and the remaining onion and placed a few slices of lemon on top of all this. Had a few mushrooms and spring onions that needed to be used, so sliced those and sprinkled over the top of everything. I put it in the oven on 200 for about 30-40 minutes (depending on thickness of salmon). I made my own sauce to go with this: heat some single cream in a saucepan (be careful not to overheat, as it will curdle), added a little milk, some freshly squessed lemon juice (about half a lemon as was only cooking for 2), some saly/pepper and a sprinkle of dill. Then made some mash and i either do salad with this, broccoli or green beans. We thoroughly enjoyed this meal Above is a picture of it before it went in the oven.

sounds nice... I dont think I would eat the fish lol.. but nice for guests and 'other' people lol
