Ramadan.

Ramadhan Mubarek to all the muslims who read my blog :)

As most of you know i am not a muslim, but my husband is and i thoroughly enjoy cooking for him! I have posted a pic of the dates he eats at Iftar and he loves them. They are simply stuffed dates.

I simply cut the pip out of the dates and mix together a paste that consists of almonds, sugar and rose water.

I never measure when i make this, i just guess how much i am using. I grind a handful of chopped almonds (without skins) and about the same amount of castor sugar together. I then make it into a paste with rose water, sometimes mixing the rosewater with water as it is quite strong. Then all i do is stuff a small amount of mixture into the slits i have already made in the dates when removing the pips and viola!

Break your fast with these yummy dates with a glass of milk, lining your tummy after a day of fasting and also giving you a small sugar boost after going without food all day.

I tried out you cheese and potato filling for my samosas and they were a treat. I think I might give these stuffed dates a go some time too. They look nice.

I'm afraid i have'nt been studying, pregnancy seems to have completely changed me, it's weird. But apparently quite normal.

As for my dates, that is not my pic, i found that, mine actually look different than that, but very yummy. Sooooo easy to make ammena, even just for 1.

I'm glad you liked the cheese and potato filling umm hibaat. It was my nan who gave me the idea, the only thing i added was a little fresh corriander.
And for anyone who is wondering, the whole mix just consists of potato, grated yellow (i use cheddar) cheese, finely chopped and fried onion, salt/pepper and then a little fresh corriander! Very nice in my opinion. Will make more filling tonight for the freezer! :)
